African Peanut Soup
INGREDIENTS:
2 tbsp. olive oil
2 onions, chopped up
2 red bell pepers, chopped up
4 garlic cloves, finely chopped
1 can crushed tomatoes
8 cups vegetable broth
Pepper to taste
1/4 tsp chili powder
2/3 cup crunchy peanut butter
1/2 cup brown rice
DIRECTIONS:
Saute onions, bell peppers and garlic in oil. Stir in tomatoes, veggie stock, pepper and chili powder and simmer for 30 minutes. Stir in rice and simmer for 15 minutes. Stir in the peanut butter until smooth and serve!
